Why does my royal icing crater? 

  • Use a thicker consistency of royal icing. If it’s a honey consistency, start over.
  • Run a toothpick through the royal icing. 
  • Pop all bubbles.
  • Don’t move the cookies once they’ve been flooded with royal icing.
  • Make sure your coat of royal icing is even.
  • Dark colors contribute to consistency problems with Royal Icing, which is caused by too much coloring.
