Why does my royal icing crater?
- Use a thicker consistency of royal icing. If it’s a honey consistency, start over.
- Run a toothpick through the royal icing.
- Pop all bubbles.
- Don’t move the cookies once they’ve been flooded with royal icing.
- Make sure your coat of royal icing is even.
- Dark colors contribute to consistency problems with Royal Icing, which is caused by too much coloring.
