  • Whenever I need to make buttercream or fondant, I always double or triple what I’m making to save time on future projects.
  • My cookie dough freezes extremely well. When I have slow time, I make a few batches. I also save extra icing to add together to make black. I make royal icing to a “writing” consistency instead of the typical stiff consistency. I use thinner consistencies more frequently, so it’s easier to add water or powdered sugar to thin or thicken it as needed.
  • I also save ALL my icings in the fridge, in a Tupperware. It normally lasts long enough to be remixed or repurposed for multiple orders. I hate to waste!
